The Benefits of Bison

Known as "nature's perfect protein" - bison is a highly nutrient-dense food because of the proportion of protein, fat, mineral, and fatty acids to its caloric value.

According to the USDA and the National Bison Association, bison is a healthier choice in comparison to beef, pork, chicken, and salmon because it has significantly less fat and calories, less cholesterol, and higher levels of protein, iron, and vitamin B-12.

See below for additional benefits and how we harvest at CavaLoma Ranch.

Buying In Bulk

One benefit of buying bison directly from a rancher is the option of buying in bulk.

Buying in bulk means that multiple customers agree to purchase an entire bison. The meat is allocated equally between the customers, each receiving all cuts proportionately. Bulk purchasing allows for custom cutting of the meat and cost savings.

What To Expect When

Ordering Bulk Bison

We arrange orders by the whole animal and divide the different cuts equally among meat purchasers. You will receive your share of primal cuts (Filets, NY strips, Ribeyes) and Roasts and Ground meat.

We are typically targeting our best animals for harvest between 20 and 30 months of age. Grass-fed, healthy animals take that long to fully develop and optimize their potential. Carcass hanging weights will average between 600-700 lbs yielding 275-350 lbs of packaged meat.

Process

Our processing Partner, Woodbury Taxidermy + Wild Game Processing, in Ingram, TX will assist with pasture harvest, transport, and preparation of the final packaged product. All cuts are vacuum sealed, wrapped, and labeled.  Woodbury’s custom processing offers you the ability to make other value add products with your bison. Examples include; sausage, hunter’s sticks, and jerky.

Woodbury’s fees are paid directly by the customer and are not included in the cost of the meat.

Sustainable Ranching

CavaLoma Ranch and CavaLoma Ranch Bison have been entrusted to the stewardship of the Anderson family. The Andersons believe the land belongs to God and they are blessed to care for it and its biodiversity in a sustainable way. Bison contribute to the health of the ranch’s ecosystem through forage management, seed redistribution, fertilization, and soil management. CavaLoma is a functional ecosystem of rangeland, wooded habitat (oak and juniper), caves, aquifer recharge, and home for a diverse population of mammals, reptiles, insects, birds, grasses, flowers, and microbes.

We are committed to preserving CavaLoma’s biodiversity through best practices of sustainable ranching. Please join us in supporting our mission of conservation and preservation through your purchase of CavaLoma products.
